- Use a boneless chicken thigh and dice it.
- Marinate the chicken with kicap pekat, kicap, kicap cair, 1/2 tbsp of tapioca starch, pepper, oyster sauce and salt.
- Remove seeds from dried chilli by cutting it into halves and soak in hot water for 15 minutes. Rinse the seeds away with water repeatedly.
- Heat wok, add in oil.
- Add in garlic, ginger and dried chilli.
- Add in chicken and fry it.
- Add in water and cook the chicken. Add in water the 2nd time when the water dries up.
- Add in 1/2 tbsp of sugar.
- When the water dries up, add in 3 tbsp of black vinegar.
- Add in green onions.
