端午节

Muah chee

Glutinious rice flour Blended peanut Castor sugar This is similar to make tang yuan. Add water bit by bit into the glutinious rice flour. When it becomes a dough ball, press it until it becomes a big round dough. Put it in boiling water. When it is cooked, it will float to surface. Mix sugar with peanut.  Cut the muah chee into small pieces and mix with the ingredients ready.

炒蘑菇

King Oyster mushroom 金针菇 白玉菇 Dried chilli Heat frying wok with oil.  Add in garlic and king oyster mushroom. Stir fry until golden brown. Add in the others mushroom.  Season with salt and dark soy sauce.

白斩鸡

I took the frozen chicken out and let it thaw at 3pm in the afternoon before cooking at 5pm. Same as for lunch. I bring the meat to thaw at about 9am. 1 Chicken thigh Cili padi Calamansi juice Dark soy sauce Sesame oil Ginger Salt Light soy sauce Sprinkle some salt on top and below of the chicken meat.  Add in some light soy sauce too.   Steam the chicken thigh with ginger pieces on high fire for 20-25 minutes. Set it to cool for a while and chop into pieces.  Steam for another while if you found the chicken pieces is still covered with blood at the bones. Blend cili padi and add in calamasi juice. p/s You can get ready the chinese leek, shallots & garlic which is fried together and placed on top of the chicken with not too much oil(for the chicken soup essence might get too oily to be taste) before steaming. 炒杂菜

Cauliflower Corn Mushroom Tomato Heat frying wok with oil. Add in garlic. Fry all the ingredients and add water. Keep the tomato to the last.  You may add 1/2 tbsp of 大暑粉and water then add in the dish. You can add prawns, 腰豆,辣椒丝,bell pepper, 芹菜等。。。

云吞/Kiaw

Samosa style Please refer to this link on how to fold wanton skin http://www.homemade-chinese-soups.com/how-to-fold-wontons.html I personally like the Samosa style and envelope style. The envelope style is easy to store in container and then in fridge. Take a piece of wanton skin, flip it back (seen from tv), and placed the meat on top!! If home-made wanton, it is more plenty of quantity and meat ingredient. You can cook as much as you can eat.  RM15 五花肥肉(绞肉) 1 包云吞皮(浅巧克力色纸包的) You may season the meat with some salt or any other seasoning like pepper, dark and light soy sauce. Wrap the meat by in the style of your preferences. Place the wanton meat in the boiling water for a while before ready to cook.  Heat wok. Add oil.  Put in garlic and shallots. Add in water. Add in wanton, boil it for a while. You may keep the rest folded wanton in fridge for next time. Just defrost it and cook whenever you want to eat. Serve with light soy sauce/dark soy sa...

排骨王

Plum sauce Dark soy sauce Light soy sauce Pepper Tomato sauce Salt Sugar 排骨 Marinate the pork rib overnight with plum sauce, dark soy sauce, light soy sauce, pepper, tomato sauce, salt & sugar. The next day, take out the marinated pork rib from the fridge. Heat the frying wok with oil. Add in garlic and shallots. Add in the marinated pork ribs.  Simmer for 30 minutes in low heat. In between, add in tomato sauce and plum sauce again.

豆腐炒咸鱼猪肉

Salted fish 2 pieces of toufu Garlic Minced pork Fry the toufu until it turns golden brown. Heat frying wok with oil. Add in salted fish, fry for a while.  Mix the salted fish with the minced pork in a bowl.  Heat the frying wok with oil again, add in the pork mixture.  Fry until the pork is cook.  Add in the toufu.

Butter milk prawn

I got the idea of cooking buttermilk prawns through Family Kitchen with Sherson cooking programe,  the buttermilk Spinach episod. Also from this link, https://www.youtube.com/watch?v=vUSpMxYchnU https://www.youtube.com/watch?v=FypA4Q7wxWc Evaporated milk Milkmaid Prawns Butter Garlic Sliced chilli Pout in oil before melted the butter so as not to cause the butter to brown. Add in evaporated milk and 2 tablespoon of condensed milk(Milkmaid). Put aside. Heat wok with oil, add in prawns. Fry until the prawns are cooked. Pour in the butter milk mixture.  Ready to serve.

烫豆腐

2 pieces of toufu Boil the water. Put the toufu in the hot boiling water. Let it boil for a while. Serve with dark or light soy sauce.

Sotong in curry powder

My husband ask me to cook sotong with curry powder. 2 big sotong A1 meat curry powder 2 small onions Garlic Marinate sotong with 1 tbsp on meat curry powder. Heat frying wok with oil. Add in garlic & onions. Add in sotong, salt to taste & some curry powder. Stir fry until cook.

Belacan Midin

Midin Belacan Garlic Chilli Heat frying wok with oil. Add in garlic& belacan. Add in midin. Stir fry for a while. Add in water. Put chilli on top for decoration.

Chicken rendang

400g of chicken A packet of 50 cent Star anise, cinnamon stick &cloves 2 Lemon grass Chilli 1 packet of Nyonya brand rendang paste Kerisik 200ml thick coconut milk Heat frying wok with oil. Add in star anise, cinnamon stick &cloves. Add in rendang paste and lemon grass.  Add in chicken, coconut milk in portion &kerisik. Simmer for 35 minutes until the meat is tender.  Add chilli for decoration.

蒸鸡蛋

2 eggs Water Dark soy sauce Light soy sauce Garlic Beat eggs. Add in some water, dark &light soy sauce. Heat frying wok with oil, add in garlic. Pour the garlic oil on top of the egg mixture. Steam for 10-15 minutes.

鱼蒸酱油麻油

Add in dark &light soy sauce in the hot oil and little bit of water. Steam for 15 minutes. Before serve, add in 1 tbsp of sesame oil.
