Peel off all the durian flesh from it's fruit for about 2-3 small size durians with a spoon (Remove and scrap the flesh out of its seeds). Needless to use very good quality durian flesh for it will taste good after being cooked. Store half of the flesh in a container, add some salt and place it in the refrigerator. You can use about half the portion of the flesh for about a bowl, depending on how much you want to eat right away. Heat wok and add in oil. Add in the durian flesh, fry till lightly golden brown basically with low heat. Add in 1/2 tablespoon of sugar, not much salt just to taste or more depends on your preferences. Fry slightly until it is fragrant full of durian smell and looks golden brown. Warm it up again for next meal if you can't finished it. This used to be one of my favorite dishes cooked by my mother. My mother told me to drink water mix with a bit of salt to ease the heat after eating fresh durian.
