| Pumpkin soup with coconut milk |
- Cut pumpkin into desired size.
- Heat wok, add in more oil, garlic and shallots. If you want to add onions, sauté the onion first. When it turns soft then add in pumpkin and fry.You can add in potato too.
- Then, put pumpkin in a pot and add in water.
- Boil for 30 minutes. When the pumpkin is soft, turn heat to simmer position.
- If you have a hand blender, blend the pumpkin with a hand blender. If have blender which cannot support heat, leave the pumpkin soup to cool under the fan for half an hour then blend it with a blender.
- Add in 200ml coconut milk.
- Add in appropriate amount of salt & pepper.
- Boil for 5-10minutes.
