Pineapple cookie



Bake using an aluminium cake tray of 26cm for a small oven



Remaining dough becomes butter cookies

I followed the receipy in below link and made 20 pieces of pineapple cookies. I double up the volume of the dough and manage to make 40 pieces of pineapple cookies. As the pineapple paste that I bought at Farley, Kota Samarahan just enable me to have paste just enough for 40 cookies, so the  remaining dough i add some sugar, simply shape it with the acuan &press the surface with a fork for style and bake it at the 150 celcius for 20 minutes and it turns out to become butter cookies. For this pineapple cookies receipy, I bake mine at 150 celcius for 20 minutes. Do not overbake else the cookie which is supposed to be crunchy and soft turns hard.


(For 20 pieces only)
For dough:
  • 200g  flour
  • 100g butter
  • 2 eggs (1 egg for pineapple tart, 1 for egg brushing)
  • 0.5 tbsp of water
  • Pinch of salt  
  • Pineapple paste


How to make it?
Add pinch of salt into flour. Mix butter&flour. Mix it with your fingers. Add egg(do not beat) &little bit of water. Mix until it becomes a dough(do not knead). Keep chill in refrigerator for 30 minutes. Meanwhile, roll the pineapple paste into large round shape and placed it on the tray. To shape the dough with mold, spread the flat dough at not of too thin for it might break or unable to support the weight of the pineapple paste on top. You can roll it by using transparent cling wrap which is fold into halves and roll on the clean surface with dough in between or even on the table if you don't have a flat surface specially for dough kneading.  Then, press the dough with pineapple cookie cutter. Remove the shaped pineapple cookie and placed the round pineapple paste on top one by one. Grease the pan with butter or placed baking paper cut into pan shape on top. Place the pineapple cookie one by one not of too near on the pan(line it with baking sheet). Cut the strips with the remaining side of the dough and chopped into short strips with a dough cutter or plastic knife and decorate on top of your cookie. Lastly, brush it with egg wash (1egg and 1 tbsp of water) The less water you add, the darker it becomes.

Once it is nearly done, use a spoon to lift the cookie to check weather it's underneath is golden brown not. Then, turn on the upper heat bar or broiler to turn it's surface into golden brown. Do not let it turn into dark brown or over-bake.

Once it has cool down after right out of the oven, place it in a container with baking sheets cut (draw out the size of the container with a pen/pencil and cut it out) according to the size of the container at each layer of cookie arrangement.

This is the latest design of pineapple cookie with large pineapple fillings. Yummy!!

猪肚汤 Pig stomach soup

(Store half in plastic storage box or Tupperware freezer mate) Bring to boil a pot of hot water with pig stomach until soft for about 1 hour. Boil a pot of soup with bones or ribs, peanuts and small white pepper for 1 hour. Chopped the pig stomach and add in the pot of soup. Ready to serve.
