(A) Cook the soup
Boil a pot of hot soup with RM2 chicken bones bought from Stutong market. This soup is also used to cook the chicken rice later. After taking out for cooking rice purpose, you can add in辣菜to turn into 辣菜鸡骨汤for better taste.
(B) Steam the chicken
Marinate two pieces of chicken thigh with salt, pepper, oyster sause and 1/2 tablespoon of light soya sauce. Steam the chicken for 20 minutes. Chop the chicken into pieces. Steam for a while if your chicken is still with blood at the bones. Or steam for 25 minutes instead of 20 ninutes. Add in 1 tablespoon of sesame oil.
(C) The Rice
Fried the garlic and red onion in a frying pan. Add in 2cups of rice. Melt in 2 tablespoon of butter. Add in 香茅 and salt to taste. Pour the rice in the rice cooker and add soup until level 2.5 for 2 cups of rice.
(D) The Chilli Sauce
Grind 8 cili padi. Add in 酸吉2粒。You can also add in soya sauce as you like or to replace calamansi juice.
(E) The cucumber
Chop off the head and tail part and peel off the skin. Cut into long halves and scrap off the inner part. Then, finely cut the cucumber. Add in 3/4 tablespoon of salt and squeeze the cucumber for it to turn soft. Wash away the salt. Add in 3 tablespoon of sugar & pinch of salt & 酸吉3粒 or more to get a sweet and sour taste.
