2pcs of large chicken thigh about 1kg
A1 curry paste (L)
1 Packet of tumisan asli of star anise, cinamon stick and cloves
Coconut milk 200ml
3 Potatoes
2 Lemon grass (fat and big the better)
A1 meat curry powder (2tbsp for marinate&2tbsp to be added into curry)
2tbsp of sugar
Appropriate amount of salt
Additional: 腐竹(break into 3 parts and soak in water till soft)
- Marinate the chicken thigh with 2tbsp meat curry powder for a few hours.
- Heat the frying wok with pretty much oil.
- Add in tumisan asli and lemon grass.
- Add in marinated chicken and potatoes.
- Add in water(yet to cover up the chicken) and coconut milk, do not finish up your coconut milk. Leave some for last simmering at the end of your cooking.
- Simmer for 30 minutes until the gravy becomes thick and the meat turns tender. In between, add in 2 tbsp curry meat powder.
- Lastly, add in some additional water and the leftover coconut milk and simmer for 15 minutes.
- Best to serve with rice or bread.
I find that I like cooking this curry more than the one with curry pep bought from the market. This is easier and of course tastier.
